Every holiday my father in-law, aka Granddaddy, whips up these delicious little squares. He’s so proud of them. As he should be, they’re pretty darn good! When he gave me this recipes he had one condition, he had to taste them before I could put them on the blog. They had to be “up to snuff”.
I stayed pretty true to his recipe. The only changed I made were to toast the pecans and coconut and I used a little bit less of the apricot preserves than he does.
I got the Granddaddy seal of approval! So I proudly present to you, Granddaddy’s Apricot Bars.
How to Make Apricot Bars
These apricot bars are so easy to make.
Start by toasting the chopped pecans and coconut then set it aside to cool. Next put the flour, sugar, baking soda, salt and butter in a large bowl. Use a pastry cutter to cut in the butter until the mixture looks like bread crumbs. Then mix in the pecans and coconut. Press half of the mixture into a lined 9 x 13 inch pan. I like to line the pan with parchment paper to keep the bars from sticking.
Spread the apricot preserves in an even layer over the crust. Quick tip, apricot preserves are stubborn and don’t like to spread very easily. I dropped spoonfuls in different spots and gently mashed them until I got a relatively even layer across the whole thing.
Finally, cover the preserves with the rest of the crumb mixture and press it down firmly with your hand. Pop them in a 350° oven and bake for about 30 minutes, until they’re golden brown. Let them cool and cut them into squares.

Ingredients
- 2 cups flour
- 1 cup sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup butter
- 1 cup chopped pecans
- 1 cup coconut
- 1 & 1/2 cup apricot preserves
Instructions
Preheat oven to 350°
Toast the chopped pecans and coconut.
Put the flour, sugar, baking soda, salt and butter into a large bowl. Using a pastry cutter, cut in the butter until the mixture is crumbly. Mix in the pecans and coconut.
Press half of the crumb mixture into the bottom of a lined 9 x 13 inch pan.
Drop spoonfuls of apricot preserves onto the crumb layer. Gently spread the preserves into an even layer, covering the crumb mixture.
Cover the preserves with the remaing crumb mixture. Press down firmly with your hand.
Bake for 30 minutes or until golden brown. Cool and cut into squares.
