It’s Christmas time!
My favorite time of year! Nothing beats the feelings of happiness and joy that comes with the holiday season. My holiday traditions include; time with family, non stop baking, watching A Christmas Story (oh fudge!) and forcing my husband to enjoy a Hallmark Christmas movie pretty much every night in December. Of course, my favorite holiday traditions are the ones that end with sweet treats. This peanut butter fudge is the first thing that comes to mind when the holidays roll around every year. My grandma (aka Mam Maw) has been making it for as long as I can remember and for the last few years I’ve taken over that tasty task.
I’ll have to admit, the first time I thought about making fudge I was a little intimidated. I had heard stories about fussy fudge recipes that require expert temperature control and messy volcanic eruptions of molten hot sugary lava all over the stove. But I love fudge and I wanted so badly to learn how to make it. So one year I decided that I was going to master the art of fudge making. Right away, I knew that peanut butter fudge had to be the first batch I would try to make. I got the recipe from my Mam Maw and went to town.
So Easy!
I was thrilled. It was so much easier than I expected. It was quick, easy, and didn’t require a candy thermometer! This recipe quickly became my go-to fudge recipe. It’s got that fantastic old fashioned hard fudge texture without all of the old fashioned hardwork. The salty sweet taste of peanut butter really makes it impossible to eat just one.
Tips for Success:
- Get your ingredients together before you start cooking. Almost everything gets dumped into the pot right away but you want the last two ingredients within arms reach so you can stir them in quickly. I may or may not have had to call my husband into the kitchen to stir for me while I opened a bag of peanut butter chips.
- Save yourself from sugar lava eruptions by buttering the rim of your pot. You’ll thank me later, this stuff grows while it’s cooking.
- Butter and line a 9 inch pan. I like to have extra parchment pan hanging over the sides of the pan so that I can pull it out before cutting it into squares.
- Stir, stir, stir. Keep stirring as you cook. If you let it sit the sugar will start to burn. Yikes!
- Once it comes to a boil and those bubbles start popping when they hit the surface, start your timer. 5 minutes of boiling will give you that fantastic hard fudge texture. No need for candy thermometers here!
- Let it set. It should be set within a couple of hours but I like to let mine sit overnight before cutting.
Easy Peanut Butter Fudge
This quick and easy peanut butter fudge is rich, creamy and oh-so-peanut-buttery!
Ingredients
- 2 & 1/2 cups sugar
- 3/4 cup evaporated milk
- 7 ounce jar of marshmallow fluff (about 1 & 3/4 cups)
- 1/4 cup butter
- 3/4 teaspoon salt
- 11 ounce package peanut butter chips
- 3/4 teaspoon vanilla extract
Instructions
- Butter the rim of a large sauce pan. Butter and line a 9 inch pan with parchment paper, making sure to leave enough paper hanging over the side to pull it out of the pan once cooled.
- Combine sugar, evaporated milk, marshmallow fluff, butter and salt in the sauce pan. Cook and stir over low heat until all of the ingredients are well blended.
- Continue stirring and bring to a boil over medium heat. Lower the heat and continue to boil for 5 minutes, stirring constantly.
- Remove from heat. Add in the chips and vanilla. Stir until the chips are melted. Pour mixture into buttered and lined 9 inch pan. Cool on a wire rack for a few hours (I usually leave it overnight). Remove from pan and cut into 1 inch squares. Enjoy!
